Description
The Head Chef at Escapade leads our kitchen brigade in delivering a unique luxury lifestyle experience. By building and maintaining the Escapade culture and service standards – the Head Chef will lead the department to commercial and brand success.
The Clubhouse will consist of a modern international grill restaurant and bar destination concept, In Residence Dining delivery service and a pop-up roof deck ready for year-round activations.

Key Responsibilities
» To create and implement a best in class and award-winning F&B experience
» Lead a dynamic kitchen team in the most exciting restaurant at Silverstone.
» Drive innovation and create a culture of menu development.
» Have a firm grip on the costs of the restaurant kitchen, from labour through to always striving to find efficient solutions whilst maintaining the quality and integrity of the menu.
» Both guest and team experience will be at the heart of all you do. You’ll lead your team by example, keeping them involved and motivated; helping them feel empowered and supported, confident in providing top Hox experiences for our guests and comfortable turning to you with questions.
» Work closely with the F&B Manager and General Manager on menu development and to ensure food quality and consistency is always where it should be.
» To work with external catering partners to deliver major event hospitality over key events such as the Formula One British Grand Prix
» Your creativity will inspire the team to deliver beyond set expectations
» Responsible for your departmental Profit & Loss, including forecasting and budget planning
» Implement & maintain departmental procedures, policies and checklists which provides structure, yet reduces admin for the team at peak times and allows your team to focus on who is important – our guests
» To ensure staff schedules, holidays and other leave are co-ordinated in line with business levels to achieve maximum staff and guest satisfaction
» Communicate & monitor standards set out by the Escapade General Manager
» Ensure controls are in place to maintain operational/departmental budgets, equipment & stock
» To control ordering/purchasing and to maintain stock levels
» Ensure all staff have been trained on departmental procedures, safe working practices & luxury customer service
» To be the main point of contact for guest complaints and customer feedback in person, by email and on social media
» Identify & rectify issues reducing quality performance of the department
» Make recommendations to the General Manager on improvements which can be made outside of your control
» Maintain open channels of communication with all other department heads informing them of any changes which may affect them
» Participates in the preparation and execution of hotel goals
» Monitors and controls inventories for operating equipment
» Managing staff performance including rewards, recognition and disciplinary practices where needed.
» Shall carry out ad-hoc duties & projects as advised by the hotel General Manager within the scope of your job role.

F&B DEPARTMENT P&L
These outlets are YOURS – you will display business acumen, commercial expertise and a drive to achieve business results. You will be revenue driven and will take all efforts to protect revenue and management costs.
Detailed Objectives will be set through the Personal Development Review (PDR) process
Skills, Knowledge and Expertise
» A Minimum of 2 years’ experience as a Head Chef or Senior Sous Chef in a successful lifestyle/distinctive restaurant
» Pre-Opening experience is advantageous
» Experience of managing a team of at least 15 staff
» A strong, yet positive leadership style
» A good command of the English language
» Has an immaculate level of personal grooming & hygiene
» Full, Clean UK driving licence
